Koke — The First Washing Station in Yirgacheffe
The Koke Washing Station, located on the outskirts of Yirgacheffe, is the region’s first established processing facility, handling cherries from over 800 smallholder farmers.
Equipped with 10 fermentation tanks and situated at altitudes above 2,000 meters, Koke benefits from the pristine air and abundant sunlight of the Ethiopian highlands, resulting in exceptional coffee quality.
Here, small and intensely aromatic Kurume varieties and large, sweet Daga cherries are primarily processed, producing coffee known for its rich fragrance and complexity.
Meticulous Processing for Exceptional Flavor
1. Cherry Selection
Freshly harvested cherries are carefully sorted by ripeness: about 85% fully ripe, 10% overripe, and 5% underripe.
2. Fermentation & Washing
The selected cherries are washed in clean water tanks, leaving only ripe ones for fermentation.
They are then placed in fermentation tanks for about 4 hours, where a natural sugar reaction develops Koke Honey’s signature sweetness and aroma.
3. Natural Drying
After fermentation, the cherries are slowly sun-dried for about 35 days on African raised beds.
They are covered with mesh screens to protect from direct sunlight, allowing a gentle, even drying process that preserves the coffee’s honey-like sweetness and lingering finish.
Golden Sweetness, Long and Gentle Finish
Among Ethiopian highland coffees, Koke Honey stands out for its small, dense beans packed with flavor.
In the cup, you’ll find notes of ripe peach, wild honey, and a bright citrus acidity, finishing with a smooth, sweet aftertaste reminiscent of golden honey.
Produced each year in limited quantities under direct contracts, this coffee represents the essence of Ethiopian honey processing and is a favorite among specialty roasters worldwide.
