FARM
Finca La Marquesa is located at 1650 meters above sea level in San Pedro de Vilcabamba, Loja, Ecuador. The 3.5-hectare farm is led by Ximena León and Hubert Ontaneda, dedicated producers who focus on cultivating high-quality, experimental microlots.
The region’s unique terroir, with its dry mountain air and diverse soil composition, supports slow cherry maturation and complex flavor development. The farm applies selective harvesting and innovative processing protocols, including carbonic maceration and controlled drying techniques, to bring out the full potential of the Sidra varietal
PROCESSING
The coffee harvested in 2025 underwent anaerobic fermentation for 48 hours after confirming a Brix level of 22–26 in the cherry state.
Subsequently, the pulp was removed, the beans were transferred to stainless steel tanks, CO₂ was injected, and secondary fermentation was carried out for 24 hours under a pressure of 2 Bar.
After fermentation was complete, the coffee was washed and slowly dried on African beds for 26 days.
HISTORY

After some years of experimenting with nutrition and organic fertilizers that Ximena and Hubert performed by your account in the estate, the knowledge gained with the passing of the years, academic training, and more, have been able to render high quality coffees and these grains are slowly traveling the world together with their history.
Ximena and Hubert have 6 children of which 4 of them work in coffee, in recent years, after much hard work, effort and sacrifice, have your coffee shop in the city, and in the same way with its processing Plant cafe, where they process their coffees and also more cafes friends coffee lovers.
His third Son, Hubert Jr. it was formed and has long studied the coffee industry being: Barista, Roaster, taster SCA, taster Q Arabica Grader, is in charge of analyzing in the laboratory of the company of all the coffees are processed on-farm and farm partners.
Finca La Marquesa developing a program of collaboration with more producers where they have a window through our foreign clients to sell cafes at a fair price to the producer, these coffees are processed in a processing plant of Ximena and Hubert, call KAFFEEMARQ which is located just in front of the large cerro MANDANGO a very famous mountain in Ecuador.
